Lentil and Sweet Potato Chili

My mum sent me this recipe last week and I made it on Tuesday.  Garret and I are big meat fans, but I didn’t feel like meat was missing from this veggie chili (although I’m not sure if he would say the same…) You could add a ton of other veggies to bulk it up as well!

2 tbsp oil
1 large  onion chopped
8 garlic cloves, sliced
1 tbsp each of chili powder, cumin seeds (i used powder) oregano
1 can lentils (540 ml) drained and rinsed
1 can tomatoes (796 ml)
1 sweet potato peeled and diced
1 chipotle pepper, packed in adobe sauce, minced (i didn’t do this)
1 red pepper

sour cream and chopped cilantro and green onion to garnish.  I used grated cheese and  plain Greek yogurt

Heat oil, saute onion, pepper and garlic for about 5 min. stir in chili, cumin and oregano, cook just until spices heat through and become fragrant, a minute or two.  Stir in lentils and tomatoes, Add potato, chipotle pepper (if using)
Bring to a boil, reduce heat and simmer, stirring until potatoes are tender…about 15 minutes. (I had to leave it longer than 15 minutes to get the potatoes to my liking)

Soup for Annie

My colleague Annie was curious about the recipe for the soup I made the other week…here she goes:

Sweet Potato and Coconut Quinoa Soup

2 Large Sweet Potatoes

2 Tbsp water

1/2 cup onion

1/2 cup Quinoa

3 cups Vegetable stock

1 cup coconut milk

1/4 tsp Cayenne pepper

1/4 tsp Chili powder

1/4 cup plain yogurt (optional)

Wash and peel potatoes. Cut into  2-3″ pieces.  Boil until just soft but not mushy (roughly 6 mins I found)

Place water and onion in large saucepan over medium heat and cook until the onions soften.  Stir in quinoa and vegetable stock and bring to a boil.  Reduce heat to medium and cook for 15 mins until quinoa is cooked.

Add sweet potato to the saucepan. Puree the mixture with a hand blender. Return to low heat and stir in coconut milk. Add cayenne and chili powder.  (yogurt can be added on top when serving)

This was delicious and I am a crazy big fan of Quinoa!!! I would have added a bit more spice next time and I think if you want to reduce calories you could probably add less coconut milk.  However it was super delicious and lasted me for quite a few lunches.

yum!
